Skillet Cauliflower and Kale
Lately, I’ve been trying to incorporate more green leafy vegetables into my diet. This recipe combines a favorite food of mine (riced cauliflower) with kale to make a great side dish. Pair this recipe with your favorite chicken or fish entrée.
Makes 2 servings
Serving size: ~1.5 cups
Ingredients for skillet cauliflower and kale
- 3 cups riced cauliflower
- 1 cup kale, chopped
- 1 tbsp olive oil
- Pinch of salt
Directions for skillet cauliflower and kale
- Heat olive oil over medium heat in a medium-sized skillet.
- Add in riced cauliflower, kale, and a pinch of salt. Stir ingredients.
- Cook on medium heat for 8 to 10 minutes.
