Skillet Cauliflower and Kale

Lately, I’ve been trying to incorporate more green leafy vegetables into my diet. This recipe combines a favorite food of mine (riced cauliflower) with kale to make a great side dish. Pair this recipe with your favorite chicken or fish entrée.

Makes 2 servings
Serving size: ~1.5 cups

Ingredients for skillet cauliflower and kale

  • 3 cups riced cauliflower
  • 1 cup kale, chopped
  • 1 tbsp olive oil
  • Pinch of salt

Directions for skillet cauliflower and kale

  1. Heat olive oil over medium heat in a medium-sized skillet.
  2. Add in riced cauliflower, kale, and a pinch of salt. Stir ingredients.
  3. Cook on medium heat for 8 to 10 minutes.
  4. Enjoy!
