Shredded Pork Tacos

Top these shredded pork tacos with fresh cilantro, crisp red onion and some hot sauce for a satisfying dinner that’s high in protein and low in fat.

Ingredients

  • 1 pound pork tenderloin
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 2 cups water
  • 8 corn tortillas
  • 1/4 cup cilantro, chopped
  • 1/4 red onion, finely diced
  • 1/4 cup No Sugar-Added taco sauce (such as La Victoria, Salsa Brava, Hot) optional
  • 2 cups romaine lettuce, chopped

Makes 4

Directions

  1. Place pork tenderloin in bottom of slow cooker. Add spices on top of meat and pour in 2 cups of water. Cook on LOW for 8 hours or on HIGH for 4-5 hours until meat is tender and easily shredded with a fork.
  2. Serve shredded meat with tortillas, onion, lettuce and fresh cilantro topped with taco sauce.
