Shredded Pork Tacos
Top these shredded pork tacos with fresh cilantro, crisp red onion and some hot sauce for a satisfying dinner that's high in protein and low in fat.
Ingredients
- 1 pound pork tenderloin
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 2 cups water
- 8 corn tortillas
- 1/4 cup cilantro, chopped
- 1/4 red onion, finely diced
- 1/4 cup No Sugar-Added taco sauce (such as La Victoria, Salsa Brava, Hot) optional
- 2 cups romaine lettuce, chopped

Directions
- Place pork tenderloin in bottom of slow cooker. Add spices on top of meat and pour in 2 cups of water. Cook on LOW for 8 hours or on HIGH for 4-5 hours until meat is tender and easily shredded with a fork.
- Serve shredded meat with tortillas, onion, lettuce and fresh cilantro topped with taco sauce.
