Shredded Chicken Sandwich

Here’s my take on an open faced tuna sandwich.

Ingredients

  • 4 mini bagels
  • 1 can chicken breast, packed in water (12.5 oz)
  • 1 tbs. relish
  • 2 tbs. mayo
  • salt and pepper to taste

Makes 8 servings

Directions

  1. In a medium sized bowl, add chicken, relish, mayo, salt and pepper.
  2. Pull apart chicken with fork and mix until all of the ingredients are well incorporated.
  3. Toast bagels, then add chicken topping on each bagel.
