Pumpkin Spice Eggs

Ingredients
- 2 eggs
- ½ cup pumpkin puree
- ¼ cup almond milk, unsweetened vanilla
- ½ tsp pumpkin spice
- Salt to taste
- 1 1/2 tsp coconut oil
Directions:
- In a small bowl, beat together eggs, pumpkin puree, almond milk, pumpkin spice, and salt
- In a medium size skillet, heat coconut oil on medium heat, until melted
- Pour egg mixture into skillet
- Heat egg mixture on medium heat for approximately 5 minutes (until eggs set)
