Pumpkin Spice Eggs

Ingredients

  • 2 eggs
  • ½ cup pumpkin puree
  • ¼ cup almond milk, unsweetened vanilla
  • ½ tsp pumpkin spice
  • Salt to taste
  • 1 1/2 tsp coconut oil

Directions:

  1. In a small bowl, beat together eggs, pumpkin puree, almond milk, pumpkin spice, and salt
  2. In a medium size skillet, heat coconut oil on medium heat, until melted
  3. Pour egg mixture into skillet
  4. Heat egg mixture on medium heat for approximately 5 minutes (until eggs set)
