Protein Breakfast or Snack

Make a couple of eggs in the morning, make this for breakfast or a snack later on in the day.


  • 1 egg
  • 1 tbs. olive oil
  • 4 tbs. refried beans
  • 2 Four inch corn tortillas
  • salt and pepper to taste

Makes 1


  1. In a frying pan, cook one egg in olive oil over easy, then cut in half once it has cooled.
  2. Put two tbs. of refried beans on each corn tortilla and warm on a frying pan or in the microwave.
  3. Place 1/2 cut egg on each tortilla.
  4. Add salt and pepper to taste to each egg.
