Pineapple Chicken Stir-fry

Adding a small amount of fruit is a fun way to add a summer touch to any recipe.


  • 1/4 cup pineapple
  • 1 chicken breast
  • 1/4 cup snow peas
  • 1/4 red bell pepper
  • 1/2 cup chopped broccoli
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce

Makes 1 serving


  1. 1st prep the vegetables by dicing the bell pepper, broccoli and snow peas. Add all of the prepped vegetables into a bowl and add the pineapple.
  2. Before frying up the vegetables, cut chicken into thin strips.
  3. In a medium sized pan, heat olive oil and fry the chicken for about 8-10 minutes, until it is cooked.
  4. Once the chicken is done cooking but not quite brown, add in the vegetables and pineapple and fry for another 5-7 minutes, stirring occasionally.
  5. As the stir-fry is cooking, add in soy sauce.
  6. Finally, serve in a bowl.
