Pineapple Chicken Stir-fry
Adding a small amount of fruit is a fun way to add a summer touch to any recipe.
Ingredients
- 1/4 cup pineapple
- 1 chicken breast
- 1/4 cup snow peas
- 1/4 red bell pepper
- 1/2 cup chopped broccoli
- 1 tablespoon olive oil
- 1 teaspoon soy sauce
Makes 1 serving
Directions
- 1st prep the vegetables by dicing the bell pepper, broccoli and snow peas. Add all of the prepped vegetables into a bowl and add the pineapple.
- Before frying up the vegetables, cut chicken into thin strips.
- In a medium sized pan, heat olive oil and fry the chicken for about 8-10 minutes, until it is cooked.
- Once the chicken is done cooking but not quite brown, add in the vegetables and pineapple and fry for another 5-7 minutes, stirring occasionally.
- As the stir-fry is cooking, add in soy sauce.
- Finally, serve in a bowl.
