Peanut Butter Carob Chip Cookies

If you need a small treat, without the guilt, please try this cookie recipe. Crunchy peanut butter and carob chips make these cookies sweet and crunchy. Carob chips look and taste similar to chocolate chips. Carob chips are dairy-free and lower in the glycemic index than chocolate chips making them a great alternative to chocolate chips.

Serving: 14 cookies
Serving size: 1 cookie

Ingredients:

  • 1 cup peanut butter (1/2 cup creamy peanut butter and ½ crunchy peanut butter)
  • 1 egg
  • 1 tbsp ground flaxseed
  • 1/4 cup Truvia Baking Blend
  • 1/8 tsp salt
  • 1 tsp baking powder
  •  1/4 cup carob chips

Directions:

  1. Preheat oven to 350 degrees
  2. Spray baking sheet with cooking spray
  3. Combine peanut butters, eggs, flaxseed, Truvia, salt, and baking powder in a medium size mixing bowl
  4.   Use a hand mixer to combine all ingredients
  5.   Stir in carob chips
  6.   Use a small cookie scoop to drop cookies onto baking sheet
  7.    Bake at cookies 350 degrees for 12-15 minutes
