Open Faced Breakfast Burrito

Try this take on a breakfast burrito by not wrapping the contents.

Ingredients

  • 1 corn tortilla
  • 1 egg
  • 1 tsp. olive oil
  • 2 tbs. parmesan cheese
  • 1 slice Canadian bacon
  • salt and pepper to taste

Makes 1 serving

Directions

  1. On a medium sized pan, warm tortilla on pan, then put on a plate.
  2. Dice Canadian bacon on a cutting board.
  3. In a medium sized pan, scramble eggs in olive oil, then add Canadian bacon and cheese.
  4. Once the Canadian bacon has warmed and the cheese has melted, put on top of tortilla and serve.
