Kale Avocado Chickpea Salad

This creamy protein salad is great for on the go or to enjoy outside.

Ingredients

  • 1 cup kale, chopped
  • 1/4 cup chickpeas
  • 2 tbsp avocado, diced
  • 1 tbsp extra virgin olive oil

Makes 1

Directions

  1. Add one cup of chopped kale to a bowl, then add the chickpeas.
  2. On a cutting board, slice avocado, then add to salad.
  3. Top with salt and pepper to taste and drizzle with extra virgin olive oil.
