Green Chili Pork Stew {Slow Cooker}

Fragrant, delicious and comforting, this stew combines the flavors of the Southwest. Flavorful yet mild chilies and creamy potatoes compliment the lean pork, which when slow cooked, results in a tender, fall apart meat that is sure to be a hit.

Ingredients

  • 1 Tablespoon Avocado Oil (or other cooking oil)
  • 1 1/2 lb pork tenderloin, fat trimmed, Cut into 1 inch cubes
  • 1 1/2 lbs red potato, cubed
  • 1 garlic clove, minced
  • 1 small white onion, finely diced
  • 2 cups diced Fire Roasted Green Chilies *Preferably New Mexico Hatch Green Chilies *Roasted and Peeled yourself or Approx. 4 cans (4oz each)
  • 1 teaspoon salt
  • 1/2 teaspoon salt-free Italian Seasonings
  • 1 bay leaf
  • 3 1/2 – 4 cups water depending on desired thickness

Directions

  1. In a large saute pan over medium-high heat add 1/2 tablespoon oil.
  2. Once oil is warmed, a drop of water should sizzle in it, then add half of your pork cut into cubes.
  3. Brown meat on all sides, it does not need to be cooked through as you’ll be adding it to the slow cooker.
  4. Once meat is browned, transfer it to the slow cooker. Add another 1/2 tablespoon of oil to the saute pan and brown the remaining pork the same way.
  5. Add cubed potatoes on top of the pork in the bottom of your slow cooker.
  6. Add garlic, onion, green chilies, salt and herbs.
  7. Pour water over the top. Add 3 1/2 – 4 cups of water depending on desired thickness.
  8. Cook covered in the slow cooker on high setting for 4-5 hours or on low for 6-8 hours.
  9. Remove bay leaf and serve hot.

Notes: New Mexico Hatch Chili comes from the state of New Mexico in the Hatch Valley and has a unique and full flavor. It can be purchased in specialty markets, online or in cans on the International aisle of most grocery stores. They range in levels of heat but generally those that you buy canned are mild. If you like your stew with more spice, substitute one can of diced jalapenos in place of one of the cans of green chilies.
Notes: Pork tenderloin is a cut of meat that comes from the loin of a pig and is tender, lean and low in fat.
