Egg Tofu Scramble
For some extra protein and flavor, add some teriyaki tofu to your egg scramble!

Ingredients
- 2 eggs
- 1 cube Nasoya Teriyaki Tofu
- 1/2 cup spinach
- 2 mushrooms
- 2 tsp coconut oil
- Salt and pepper to taste
Makes 1 servings
Directions
- On a cutting board, cube the tofu and dice mushrooms.
- In a medium sized pan, fry tofu, spinach and mushrooms in coconut oil.
- In a separate pan, scramble eggs after coating the pan with coconut oil.
- Combine eggs with mushrooms, spinach and tofu, then add salt and pepper to taste.
