Egg and Cheese Burritos

Need a quick, healthy and satisfying meal? This is a great option for breakfast, lunch or dinner! Add some non-starchy vegetables to your plate to bulk up your fiber intake for the day. My family loves this meal, and I love how healthy it is and relatively inexpensive, too!

Makes one serving

Ingredients

  • 2 large eggs
  • 1/3 cup shredded cheese
  • 1 whole grain tortilla or wrap

Directions

  1. Crack eggs into pan and scramble until fluffy and cooked through.
  2. Add cheese and heat until melted.
  3. Place into wrap and fold together.
  4. To decrease carbohydrate intake, opt for a low carbohydrate wrap choice. Enjoy!

    Showed this to the other half. She agreed that it looked and sounded good. Probably will be giving it a shot. Nowshe’s got me looking at pressure cookers again. Told her if we get one it’s going to be used. 🙂

    That looks great Katie!! Question. Do you use water or milk when you scramble eggs? I’ve seen a lot of people that use water but I’ve always preferred milk. If wife isn’t watching I’ll use some of my 2% milk, if she is I’ll use her whole milk. 😉
    I think I might give that a whirl along with some Grany Smith apple slices on the side.

    Hey Riddler, I do often use a splash of skim milk but did not include that in this recipe so if you do make sure to count the extra carbohydrates! Let me know if you try it, my kids love it as a dinner option!

    Will do. Have to hit grocery store next week to pick up some whole grain bread, more eggs. Will see about finding some whole grain tortillas as well. Sounds very good. Need to buy some tilapia as well and put into freezer to grill for me next time I do any grilling. Will have to pick up some lemon pepper also.
