Edamame Fusion Dish

Soybeans, veggies and chopsticks make for a fun dish

Ingredients

  • 1/2 cup edamame
  • 2 cups water
  • 1/4 cup carrots
  • 1/4 cup red bell pepper
  • 5 spears asparagus
  • 1 tsp. coconut oil

Makes 1 serving

Directions

  1. In a small saucepan, boil water and add edamame. Let the edamame cook for 8 minutes.
  2. On a cutting board, cut asparagus spears in half. Dice red bell peppers.
  3. In a medium sized pan, fry asparagus and carrots in coconut oil on low heat for 10 minutes until they are soft and browned.
  4. Add edamame and veggies into a bowl and serve with chopsticks.
