Edamame Fusion Dish
Soybeans, veggies and chopsticks make for a fun dish
Ingredients
- 1/2 cup edamame
- 2 cups water
- 1/4 cup carrots
- 1/4 cup red bell pepper
- 5 spears asparagus
- 1 tsp. coconut oil
Makes 1 serving
Directions
- In a small saucepan, boil water and add edamame. Let the edamame cook for 8 minutes.
- On a cutting board, cut asparagus spears in half. Dice red bell peppers.
- In a medium sized pan, fry asparagus and carrots in coconut oil on low heat for 10 minutes until they are soft and browned.
- Add edamame and veggies into a bowl and serve with chopsticks.
