Easy (Dairy-free) Pesto

This is a delicious way to elevate most any lean protein! Pesto pairs perfectly with chicken, turkey, fish and pork. Make up a batch to have on hand to bump up the flavor of your favorite proteins.

Makes 1 cup
Serving size 1 tablespoon

Ingredients

  • 3/4 cup fresh basil leaves
  • 3/4 cup baby spinach leaves
  • 1/2 cup walnuts
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 3 tablespoons avocado oil

Directions

  1. Lightly toast walnuts in saucepan, toaster oven or oven for 2-3 minutes at 400’F until golden brown and fragrant
  2. Pulse basil, walnuts, lemon juice and salt in a food processor until smooth consistency.
  3. Scrap down the sides and add the oil and blend until smooth consistency. Store in an airtight container in the fridge.
