Deconstructed Cabbage Roll Casserole

Casseroles can be fun to make in the winter months, but not when it heats up your whole house! This deconstructed casserole can be made in a pan and is vegan since it uses jackfruit instead of ground beef.

Cook time: 15 minutes

Ingredients for deconstructed cabbage roll casserole

  • 1/4 cabbage sliced
  • 1/4 sweet onion
  • 1/2 orange bell pepper
  • 2/3 cup jackfruit, diced
  • 1 tsp olive oil
  • 1/16 tsp paprika
  • 1/16 tsp onion powder
  • 1/16 tsp garlic powder
  • 1/16 tsp oregano
  • Salt and pepper to taste

Directions for deconstructed cabbage roll casserole

  1. On a cutting board, dice cabbage, onion, bell pepper and jackfruit.
  2. Coat a pan with olive oil, add the veggies then cook on low for 15 minutes until they get soft.
  3. Split into two bowls and serve.
