Cumin Roasted Cauliflower

This recipe is intended to be enjoyed as side dish. The variety of ingredients used in this recipe turn bland cauliflower into a full flavor fest.

Ingredients:

  • 2 cups cauliflower, chopped
  • 1 tbsp olive oil
  • 2 tbsp cashews, chopped
  • ¼ tsp cumin
  • Salt to taste
  • 2 tbsp raisins

Directions:

  1. Preheat oven to 400 degrees Fahrenheit
  2. In a medium size bowl, coat cauliflower with olive oil
  3. Mix in cashews, cumin, and salt
  4. Spread ingredients evenly onto baking sheet
  5. Bake at 400 degrees for 18 to 20 minutes
  6. Remove baking sheet from oven, add raisins, and bake for another 1 to 2 minutes
  7. Enjoy!
