Greek Salad for One

Looking for an easy but flavorful lunch idea? This has been one of our go-to meals. The fresh vegetables make for a refreshing crunch and the feta and onions give so much flavor, you don’t even need dressing!

Makes 1 serving

Ingredients for greek salad

  • ½ cucumber, sliced into quarters
  • 5 cherry tomatoes
  • 5 kalamata olives
  • ½ cup red cabbage, chopped
  • 1 inch cube feta cheese, diced
  • ½ white onion, diced

Directions for greek salad

  1. Place all chopped ingredients into a bowl and mix well.
  2. Serve immediately!
