Crockpot Sundried Tomato Chicken

As the weather starts to cool down, we start looking for meals to warm us up. I love this recipe because it is so easy to throw into the crockpot and enjoy later!

  • 8 artichoke hearts
  • 8 sundried tomatoes
  • 1 zucchini, sliced
  • 1 can low sodium chicken broth
  • 4 boneless, skinless chicken breasts


  1. Place all ingredients together in a crockpot
  2. Cook on low for 4-6 hours, or on high for 2-3 hours. Cooking times may vary based on equipment used
  3. Serve warm
