Cottage Cheese Delight

Cottage cheese is one of my favorite foods. This recipe turns simple cottage cheese into a refreshing and filling salad. Enjoy this salad either as a snack or side dish.

Ingredients:

  • ½ cup cottage cheese (my personal favorite: Breakstone 2% Cottage Cheese)
  • ¼ cup cherry tomatoes
  • ¼ cup radishes
  • ¼ cup cucumber
  • 1 large lettuce leaf
  • Pinch of pepper

Directions:

  1. Cut cherry tomatoes in half
  2. Dice radishes and cucumber
  3. In a small bowl combine cottage cheese on vegetables
  4. Place cottage cheese salad mixture on top of lettuce leaf
  5. Top with pinch of pepper
