Cilantro Sesame Chicken

This quick 30 minute marinade that gives a delicious, fresh and savory flavor to otherwise bland chicken.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons low sodium soy sauce (or substitute Tamari sauce if eating gluten-free)
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh cilantro, very finely chopped

  1. Place chicken, toasted sesame oil, low sodium soy sauce, garlic powder and cilantro in a large resealable plastic bag and massage marinade into the chicken. Let the meat marinate for 15-30 minutes in the refrigerator.
  2. Preheat grill. Remove chicken from plastic bag and grill over medium-high heat for 5-8 minutes, until chicken reaches an internal temperature of 165’F. Serve hot with roasted potatoes and sauteed asparagus.
  3. Tips/Notes: 1/2 cup of roasted potatoes has about 12-15 grams of carbohydrate and 60 calories. Asparagus has about 5 grams of carbohydrate and 25 calories in 5 medium-sized spears.
