Carrot Side Dish

Baked soft carrots are an easy side to pop into the oven while you make your main dish. The pomegranates add a nice color and texture to a traditional carrot bake.

Makes 6 servings
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients for carrot side dish

  • 6 large carrots
  • 1 tbsp olive oil
  • 2 tbsp pomegranate seeds

Directions for carrot side dish

  1. Preheat oven to 400F.
  2. Cut the ends off of the large carrots, then peel.
  3. Place carrots onto aluminum foil, then drizzle with olive oil.
  4. Bake for 20 minutes, add pomegranate seeds then bake for an additional 10 minutes to ensure carrots are soft.
