Carrot Side Dish
Baked soft carrots are an easy side to pop into the oven while you make your main dish. The pomegranates add a nice color and texture to a traditional carrot bake.

Ingredients for carrot side dish
- 6 large carrots
- 1 tbsp olive oil
- 2 tbsp pomegranate seeds
Directions for carrot side dish
- Preheat oven to 400F.
- Cut the ends off of the large carrots, then peel.
- Place carrots onto aluminum foil, then drizzle with olive oil.
- Bake for 20 minutes, add pomegranate seeds then bake for an additional 10 minutes to ensure carrots are soft.
