Carrot Coleslaw

This a protein-rich snack that is slightly sweet and salty. Carrots and edamame are topped with peanut butter and soy sauce dressing. To make this a more complete meal, try adding grilled shrimp.

Ingredients for carrot coleslaw

  • 1 tbsp creamy peanut butter
  • 1 tsp lite soy sauce
  • ½ cup shredded carrots
  • ¼ cup edamame shelled

Directions for carrot coleslaw

  1. Using a small microwave-safe bowl, melt peanut butter in the microwave for approximately 15 seconds.
  2. Whisk in soy sauce.
  3. Mix in shredded carrots and shelled edamame.
  4. Enjoy!
