Breakfast Oat Bars

I have been trying to find creative ways to add more whole grains and fiber to my diet. This recipe for breakfast oat bars should fit the bill. It features prunes, whole wheat flour, and oats. These bars can be enjoyed as either a light breakfast or as an afternoon snack.

Serving size: 1 bar

Ingredients:

  • ½ cup Prunes
  • 3 tbsp. water
  • 3 tbsp. vegetable oil
  • 2 large eggs
  • 1 cup whole wheat flour
  • 1 cup old fashioned oats
  • 1/2 cup Truvia Baking Blend
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ¼ cup coconut
  • ½ cup walnut pieces

Directions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Spray baking dish with cooking spray
  3. In a microwave safe bowl, combine water and prunes
  4. Heat in microwave for 90 seconds
  5. In a medium size bowl, combine dry ingredients: whole wheat flour, old fashioned oats, Truvia Baking Blend, baking soda, and cinnamon
  6. In a small bowl, whisk together wet ingredients: eggs and vegetable oil
  7. Use a hand mixer or stand mixer to combine both dry ingredients and wet ingredients
  8. Stir in coconut and walnut pieces
  9. Pour mixture into baking dish (9” x 13”)
  10. Use a spatula to evenly spread mixture in baking dish
  11. Bake at 350 degrees Fahrenheit for 15-20 minutes
  12. Cool for 15-20 minutes before cutting into bars
