Bell Pepper & Pesto Toast

This quick and simple recipe makes a great late afternoon snack. It can also be prepared in larger quantities and served as an appetizer. Yellow bell peppers add a crisp fresh flavor and a beautiful pop of color!

Ingredients:

  •  2 pieces Melba Toast
  • 2 tsp whipped cream cheese
  • 1 tsp pesto sauce
  • 1 tbsp diced yellow bell pepper

Directions:

  1. Combine whipped cream cheese and pesto sauce
  2. Spread mixture on top of Melba Toast
  3. Top with yellow bell peppers

    Meryl.That looks very good. What is pesto sauce? any kind of toast or is the drier toast more proffered for something like that? It does look and sound very good though.

    Great questions Thomas! Pesto is a tasty combo of basil with oil, nuts and sometimes Parmesan cheese. You can make it yourself in a blender or food processor or buy it already made in the pasta aisle of the supermarket.
