Avocado Summer Salad

I regularly make this avocado salad to have along with dinner. Recently I tried adding some protein so that I could enjoy it as more of a complete meal.

Makes 1 serving


  • ½ ripe avocado
  • 3 oz. grilled chicken, diced (For this recipe I used Tyson Oven Roasted Diced Chicken Breast)
  • ½ cup cherry tomatoes
  • 1 tsp. Dijon mustard
  • 1 tbsp. balsamic Vinegar


  1. Cut cherry tomatoes in half
  2. Cut avocado into bit-size pieces
  3. In a small bowl, gently combine grilled chicken with tomatoes and avocado
  4. In a separate small bowl prepare dressing. Whisk together Dijon mustard and balsamic vinegar until well combined
  5. Drizzle dressing over salad and gently mix all ingredients together
