Avocado Summer Salad
Ingredients
- ½ ripe avocado
- 3 oz. grilled chicken, diced (For this recipe I used Tyson Oven Roasted Diced Chicken Breast)
- ½ cup cherry tomatoes
- 1 tsp. Dijon mustard
- 1 tbsp. balsamic Vinegar
Directions
- Cut cherry tomatoes in half
- Cut avocado into bit-size pieces
- In a small bowl, gently combine grilled chicken with tomatoes and avocado
- In a separate small bowl prepare dressing. Whisk together Dijon mustard and balsamic vinegar until well combined
- Drizzle dressing over salad and gently mix all ingredients together
