Avocado Mandarin Salad

Spring here we come! Enjoy this spring salad as an appetizer or as an afternoon snack.


  • 1/2 avocado, sliced
  • 1 tbs. pumpkin seeds
  • 1/2 mandarin orange

Makes 1 serving


  1. Slice half of an avocado and arrange on a plate in a flower shape.
  2. Place mandarin orange slices around the avocado slices.
  3. Add pumpkin seeds to the middle of the salad.
