Apple and Spinach Stir Fry
Have you seen all of the jokes about the way cooked spinach looks like a fraction of the amount it was as fresh spinach? They always make me laugh, but the truth is that fresh or cooked, spinach is a powerhouse when it comes to nutritional value. It is loaded with antioxidants and is a great source of vitamin A and vitamin C. This recipe is so surprisingly flavorful, you won’t even mind the spinach. Or if you already are a spinach lover, you will be so content to have found a new recipe that includes your favorite food.

Prep time: 5 minutes
Cook time: 20 minutes
Ingredients for apple and spinach stir fry
- 1 apple, diced
- 2 cups spinach
- 1 lb ground chicken
- 1 cup vegetable broth
Directions for apple and spinach stir fry
- In a skillet, cook ground chicken over medium to high heat until no longer pink.
- Drain off excess liquid.
- Add diced apples and chicken broth and cook until apples are softened, approximately 5 minutes.
- Add spinach and stir until wilted.
- Serve immediately.
Note: Goes well with pasta, rice or sprinkled with parmesan cheese if desired!
