15 min Zucchini Pasta

If you’re craving pasta but also want something light and fresh, try using fresh spiralized zucchini! It also means that you’re adding another vegetable that would otherwise get left out. Winning! The dish is quick to make and it’s a great little meal for one that uses simple ingredients. If you’re cooking for more than one, just increase the ingredients and share! If you don’t have a spiralizer you could thinly slice it or just dice it up and add it to the dish. It could also be tasty with a little grated parmesan cheese sprinkled on top.

Servings: 1

Ingredients

  • 7oz/200g zucchini
  • 3oz/100g beef mince
  • 1 tomato
  • 1/4 cup sliced leek
  • 1 tsp olive oil
  • ¼ tsp chilli flakes
  • Sprinkle of salt

Directions

  1. Spiralize the zucchini, slice the leek and thinly dice the tomato, or place the tomato in a blender and whizz until smooth
  2. Heat the olive oil in a pan and add the leek. Cook for a minute then add the mince and stir until browned
  3. Add the tomato, chilli and salt and cook for 2 mins
  4. Then turn off the heat, add the zucchini and stir through
  5. Serve and enjoy!
