Soups and Stews

I’ve written a lot about my love for soups and stews. I’m a BIG fan of making (not to mention eating,) soups and stews – I find both to be comfy, delicious, entire meal-in-a-bowl options that always hit the spot and get better the second, third, and fourth times around. Soups and stews fill me up and don’t leave me hungry an hour later and I appreciate that. They also allow me to control the fat, sodium, and carb amounts – all huge pluses!

Once you set aside some time to make your soup and/or stew, you have a healthy meal-in-a-bowl that can be eaten multiple days and meals, and for a price that’s easy on the pocketbook.

Soups

One of my favorite soups to make is this recipe for sage, curry and butternut squash soup. I’ve been making it for years – it’s become a favorite with my family and friends and I’m always asked to make a pot for holiday gatherings! Also: It’s better the second day, third, and fourth days in and freezes well.

Stews

Personally, I’m looking forward to giving this slow cooker beef stew by Kelly Dabel a try.

It reminds me of the stew my mom would make for us growing u. It was one of my favorite meals from childhood. I don’t have the recipe and my mom is no longer around to ask but I can’t wait to try it out!
