Simple Salad With a Spicy Kick!

I love salads – we’ve established that. BUT when I come home from a work trip (usually too late at night for a proper dinner), my fridge is usually void of anything resembling fresh and crisp veggies. I wind up having a yogurt, chilling in front of the TV, and going to bed. After a good night’s sleep, I’m ready to face the day. I get organized with work and laundry and hit the market where I load up on food for the week.

Then I go home and make a simple, yummy salad, with a bit of kick!

Dressing recipe

Mix 3 tablespoons of extra virgin olive oil, 1 tablespoon of balsamic vinegar, a fresh squeeze of lemon juice, and sea salt to taste, in a mixing bowl. Whisk with a fork and set aside.

Salad recipe

Add the following ingredients to your biggest salad bowl:

  • Baby arugula – washed and spun dry in a salad spinner
  • Sliced jalapeños – as many or as little as you want
  • Sliced tomatoes
  • Sliced sweet onions
  • Grated or shaved romano cheese

Give the dressing a final whisk and add a tablespoon to the salad. Toss, eat and enjoy.
