8 Reasons to Embrace Mini Bell Peppers

I’m not sure when I actually discovered mini bell peppers, but damn if I don’t love and frequently buy, use, and eat those tasty little bell peppers all the time! They are a mini version of regular bell peppers, with an identical flavor and texture but fewer seeds. In my opinion, they actually taste sweeter and the skins aren’t quite as thick.

8 reasons why you should give mini bell peppers a try

  1. Mini bell peppers taste great.
  2. In my opinion, there is less waste than with full-sized bell peppers. If a recipe calls for half a bell pepper and you don’t use the other half immediately, where does it end up? In the fridge. Sometimes we remember it’s there and sometimes we don’t. I don’t know about you, but I hate wasting food!
  3. Mini bell peppers are an excellent snack by themselves or served with greek yogurt dip.
  4. Sliced thin and sautéed with sweet onions, mini bells make for an excellent addition to scrambled eggs/egg whites or scrambled tofu.
  5. Mini bells make for delicious pickled sweet peppers. Perfect and bite-size, no chopping or fancy knife skills required.
  6. Add a half dozen mini bells to your packed lunch for a tasty way to get an extra serving of veggies in.
  7. Less chopping. No joke, you can slice up mini bells lengthwise and no other chopping is required to achieve bite-size portions.
  8. Like regular peppers, one serving of mini bell peppers (three peppers) are loaded with vitamins C and A and are a great source of iron. Mini bell peppers are low in calories (25), are low-carb (5 grams), and contain 1 gram of fiber.
