Lunch Ideas: Mason Jar Salads

I am always looking for new lunch ideas to send with my family for their busy day. Variety is the spice of life, right? Here are a few new recipe ideas I came up with that add some flavor, texture and color to your lunchtime. Enjoy!

Chicken and Chickpea Salad Mason Jar

Ingredients

  • 1 tbsp balsamic vinaigrette
  • 1 grilled chicken breast, cubed
  • 1 TBSP chickpeas
  • 1 cup green beans
  • 1 medium carrot, diced
  • 1 medium celery stalk, diced
  • 1/2 tomato, diced
  • 2 cups spinach or other leafy green vegetable

Layer in order of list above starting with balsamic vinaigrette at bottom. This will ensure that all vegetables keep their crispy texture. When you are ready to enjoy, give the jar a good shake and pour on a plate.

Cranberry Chicken Salad Mason Jar

Ingredients

  • 1 tbsp raspberry vinaigrette

  • ½ cup unsweetened dried cranberries
  • ¼ cup almonds, slivered
  • 1 medium green bell pepper, diced
  • 2 cups spinach or other leafy green vegetable

Again, layer ingredients in order above with raspberry vinaigrette on bottom. Shake and enjoy!
