Go For The Green Beans!

Ok, I’ve been on a green beans kick as of late and for several reasons.

Seven reasons why I love green beans

  1. Raw or sautéed up in a pan with EVOO, fresh garlic, sea salt and cracked pepper, or glazed with balsamic vinegar, green beans are pretty darn tasty.
  2. Green beans are simple and seriously easy to prepare.
  3. I’ve noticed that green beans are priced to buy right now – at least they are here on the east coast.
  4. Raw green beans satisfy my crunch factor when it comes to snacking and I have a thing for crunchy snacks! I especially like dipping raw green beans served with a salsa/Greek yogurt combo or hummus. And yes, raw green beans and dip are my current go-to snack when I’m watching Netflix and or Amazon Prime.
  5. Nutritionally speaking, green beans are good for our health. One cup of green beans is just under seven carbs and has 2.7g of fiber; are loaded with vitamin A, a good number of the B vitamins, vitamins C and K, and minerals like calcium, iron, magnesium, potassium, and zinc. Important thing to note, if you are currently on a blood thinner, be sure to check with your doctor f you should eat green beans because of the vitamin K factor.
  6. Green beans travel well. As in you can pack up a container of washed, raw green beans or left over sautéed/steamed green beans, in your lunch bag and eat them as a side with your main lunch dish.
  7. You can add fresh, frozen, or leftover green beans to jazz up stir-fry, soups, or omelets, and they go great with animal and plant based proteins. Here’s a secret – I add flash frozen green beans to the majority of the soups I make from scratch!
  8. So go for the green beans!
