I Love Edamame!

I am writing about food because I love to eat! And I love eating edamame (aka, good old fashioned soybeans) in both bean and pod form. I eat them alone, in salads, soups, and as/in a side dish.

Edamame can be found in the frozen food section (so they won’t spoil quickly) of your local market; they are super easy to cook, can be served both hot or cold, and are inexpensive – so they make cooking on a budget both easier and tastier.

More big pluses: edamame is plant based, tastes good and it’s good for us!

Health benefits of edamame

1 cup of edamame beans contains 188 calories and is high in all sorts of good stuff. 1 cup of beans contains roughly 18 grams of protein and is loaded with amino acids. That same cup contains 8.1 grams of fiber. Edamame has 13 grams of carbs. It’s also packed with minerals and vitamins, antioxidants, folate, copper, calcium, thiamine, isoflavones, riboflavin, potassium, phosphates, iron, and vitamins C, K, and manganese.

The beans have some really good qualities. They are good for our hearts, heads, diabetes management, bone health, etc. There are also precautions when it comes to consuming them if you live with certain health conditions.

For me personally, I’ve found these beans to be easy on the blood sugars, as in I rarely see a big blood sugar spike after eating them. Everyone is different and your diabetes may vary.

How to include edamame in your diet?

I love snacking on edamame pods (dip the pod in a dash of sea salt and suck out the beans) while watching TV. A healthy, crunchy, slightly salty, low carb snack that makes me feeling like I’m indulging when I’m not!
