Cool as a Cucumber

Cucumbers are tasty, refreshing, easy to prepare and have the ability to take on the flavor of almost anything you serve them with. Great on their own, creatively partnered with salmon, or magically pickled, if you know what you’re doing. Did you know that the scientific name for cucumbers is “Cucumis Sativus” and that they are relatives of melons? Now you do!

Health benefits of cucumber

Nutritionally, cucumbers are mostly water so they help keep you hydrated, and you know…regular. So if you slacked on your water intake during the day, rehydrate at dinner with a Greek cucumber salad!

1 medium cucumber has 24 calories, a little over 4 grams of carbs, 1.4 grams of dietary fiber and contains the following vitamins and minerals: calcium, iron, potassium, riboflavin, niacin and vitamins A, B6, C, D, E, and K.

FYI: Vitamin K helps improve calcium absorption – which means cucumbers are beneficial for our bone health.

They also contain something called lignans, which have been shown in certain studies to help fight cardiovascular disease and lessen the risk of certain types of cancer.

Other benefits of cucumber

Literally cool to the touch, cucumbers have healing benefits when applied topically to our skin – helping to reduce swelling, inflammation, and puffiness (cucumber slices on the eyes really do work) and aide when it comes to relieving sunburn.

I keep 5 or 6 thin slices of cucumber in my freezer. I’ve found that laying the slices flat on wax paper that’s lining a small Tupperware container works best. Whenever I wake up with puffy eyes, I’m experiencing eye fatigue from being on the computer for extended periods of time, or I’ve just had my twice-yearly eye exam, I set the time on my phone for 15 minutes, put the frozen slices on my eyes and relax -it feels great! Afterward, I notice that my eyes are no longer puffy.

Cucumbers are a win-win!
