Beets, Goat Cheese and Arugula Salad

Beets are one of my all-time favorite salad additions. Packed with fiber, flavor and antioxidants, they are a healthy choice to add to any meal. I love the tangy addition of creamy goat cheese. Try it simple style like I did below. Or to bulk it up, and add some grilled chicken! A perfect way to impress guests or just make yourself an easy, healthy, satisfying meal.

Ingredients

  • 1 cup baby arugula leaves
  • 1 cup beets. I used pre-cooked spiralized beets but you can also use canned or buy them fresh and roast them!
  • 1 ounce goat cheese
  • ½ tbsp olive oil

Directions

  1. Place arugula and beets on plate.
  2. Add cheese.
  3. Drizzle with olive oil. Enjoy!
